Broiled Salmon with Veggie Slaw and Brown Rice


Broiled Salmon with Veggie Slaw and Brown Rice (serves 4)

Ingredients for Fish

· 1 lb. wild salmon, cut in 4 pieces

· 1 T. extra virgin olive oil

· ½ t. sea salt

· Pinch pepper

· 1 lemon

Instructions for Fish

  1. Preheat oven to broil (with rack on 2nd level from top).

  2. Line bottom of a broiler pan with foil, then spray pan with oil.

  3. Arrange salmon, skin side down, on rack of broiler pan. Season fish with extra virgin olive oil, sea salt, and pepper.

  4. Broil fish 9 – 10 minutes, or until just cooked through, squeeze with lemon and serve.

Ingredients for Veggie Slaw

· 4 c. finely sliced veggies (cabbage, red cabbage, carrots, bell peppers)

· 1/2 red onion, minced

· ¼ c. extra virgin olive oil

· ¼ c. vinegar (rice wine or apple cider)

· 1 – 2 t. sea salt

· Fresh ground pepper

Instructions for Veggie Slaw

  1. Combine veggies and red onion in a large bowl.

  2. In small bowl, combine extra virgin olive oil, vinegar, sea salt, and pepper. Pour over vegetables, and toss to combine.

Ingredients for Rice/Quinoa

· 1 T. extra virgin olive oil

· 1 c. rice/quinoa

· 2 c. water

· 1 t. sea salt

Instructions for Quinoa

  1. Combine extra virgin olive oil, rice/quinoa, water, and sea salt in a rice cooker, or stovetop according to directions.
