Simple Shrimp Stir-Fry

Stir-Fry (serves 4)

Ingredients for Stir-fry

· 1 ½ T. coconut oil

· 4 c. vegetables, bite-sized

· 1 lb. shrimp

· 1 – 2 T. garlic, minced

· 1 – 2 T. ginger, minced

· 1 – 2 T. tamari, or to taste

Instructions for Stir-fry

  1. In a large pan or wok over med-high heat, add oil and sauté veggies until tender yet crisp.

  2. Add shrimp and cook through.

  3. Add garlic, ginger, and tamari and cook 2 minutes.

  4. Serve over quinoa or brown rice.
